This time of year, it’s all about seasonal cookies at Maitland Manor. We serve our house-made baked goods to guests and offer them for sale to the local community. And nothing complements the holidays better than the warm spiced flavors of cookie butter (Biscoff, Speculoos, or your homemade version) paired with the light, crispy crunch of our homemade Cookie Butter Pizzelle Recipe.

Our guests love this flavor in sweet rolls and biscotti, so we developed this recipe to get that flavor in a pizzelle. Pizzelles are one of the easiest and fastest cookies to make. All you need is about 30 minutes, and an electric pizzelle maker.

Ingredients

3 eggs 156g sugar 40g butter and 73g cookie butter, melted together 226g all-purpose flour 1 tsp vanilla bean paste or pure vanilla extract 10g baking powder pinch of salt powdered sugar for dusting, if desired

Instructions

In the mixing bowl of your stand mixer with the paddle attachment, beat together the eggs and sugar. Add the vanilla, melted butter, and cookie butter, then mix completely for the perfect Cookie Butter Pizzelle Recipe.

Whisk together flour, baking powder, and salt in a large bowl. Add to wet ingredients in three batches, thoroughly mixing with each addition and scraping down sides of bowl.

Cook pizzelles per directions with your machine. For the one we use and recommend, a heaping tablespoon of batter (a cookie scoop works great here!), cooked for 30 seconds after the machine is fully heated is perfect.

Remove to cooling racks. We serve ours as is, but you can dust with powdered sugar if desired.
